Ingredients for the strawberry pop tarts recipe
- 2 cups gluten-free all-purpose flour
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- A pinch of salt
- Homemade or store-bought jam
Ingredients for the glaze:
- 1/4 cup icing sugar
- 1 tablespoon of almond drink (or any other plant-based drink of your choice)
- A few drops of vanilla extract
Preparation for the strawberry pop tarts recipe
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, combine the flour and salt.
Add the maple syrup, melted coconut oil and vanilla extract to the flour mixture. Mix until a homogeneous mix is obtained.
Divide the dough in half and roll out each half on a lightly floured surface until it is about 1/4 inch thick.
Cut the dough into equal-sized rectangles to form the pop tarts.
Arrange half of the dough rectangles on the prepared baking sheet.
Add a teaspoon of strawberry jam to the center of each rectangle.
Place another rectangle of dough on top of each pop tart and seal the edges by pressing with a fork.
Make a few small cuts in the top of each pop tart to allow steam to escape during cooking.
Bake the pop tarts for about 12-15 minutes, or until lightly browned.
Meanwhile, prepare the frosting by mixing the icing sugar, almond milk and vanilla extract in a small bowl until smooth.
Once the pop tarts are cooked, let cool for a few minutes, then frost them with the prepared icing.
Allow the icing to harden slightly before enjoying your healthy homemade strawberry pop tarts!
