Ingredients for shakshuka recipe
- 4 tablespoons of olive oil
- 1 red onion, chopped
- 2 red peppers, cut into pieces
- 3 cloves of garlic, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon of paprika
- 1 teaspoon ground coriander
- 1 pinch of cayenne pepper (adjust to taste)
- 1 can (796ml) diced tomatoes
- Salt and pepper , to taste
- 6 fresh eggs
- 2 tablespoons fresh parsley, chopped (for decoration)
Preparing the shakshuka recipe
In a skillet over medium heat, heat the olive oil. Add the onion and peppers and cook until tender (about 5 minutes).
Add the garlic, cumin, paprika, coriander and cayenne pepper. Stir and let the spices release their good aroma.
Pour the crushed tomatoes into the pan, season with salt and pepper, then simmer over low heat for 15 to 20 minutes, until the sauce thickens a little.
Make small indentations in the tomato sauce and gently crack the eggs into these holes. Cover the pan and let the eggs cook for about 5 to 7 minutes, until the whites are cooked and the yolks are a little runny.
Sprinkle chopped fresh parsley on top for a touch of freshness.
