For the cauliflower wings
- 1 cauliflower, cut into small florets
- 1 cup chickpea flour (for batter)
- 1 cup unsweetened almond drink
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
For taco filling
- Gluten-free tortillas
- Lettuce, thinly sliced
- Red cabbage, thinly sliced
- Avocado, sliced
- Fresh cilantro, chopped
- Green onions
- Plant-based yogurt sauce (blend of plant-based yogurt, lemon juice, minced garlic, salt and pepper – proportions to taste)
- Hot sauce, to taste
Preparation for Plant-based Cauliflower Wing Taco recipe
Preheat oven to 200°C.
In a bowl, combine chickpea flour, almond drink, paprika, garlic powder, cumin, salt and pepper to create a smooth batter.
Dip each cauliflower floret into the batter, making sure it's well coated.
Place the cauliflower florets on a baking sheet lined with parchment paper.
Bake for 25-30 minutes or until the cauliflower is golden and crispy.
While the cauliflower is cooking, prepare the toppings.
Reheat tortillas according to package directions.
