Ingredients for the black-eyed pea veggie burger
- 220 g black-eyed peas, drained
- 1 egg
- 1/2 minced onion
- 1 grated carrot
- Rosemary
- Sage
- Parsley
- 2 tbsp bread crumbs
- Salt to taste
- Pepper to taste
- 2 tbsp extra virgin olive oil
Steps to prepare the black-eyed pea veggie burger recipe
Brown onion in a pan with olive oil. Add carrots and black-eyed peas and let simmer until veggies are tender.
Pour half of the simmered mixture in a blender and pulse to form a puree. Add the egg and second half of the bean mixture. Pulse a few times, making sure to keep a little bit of lumps for better texture.
Add herbs, salt and pepper and mix.
Adjust consistency by adding the bread crumbs. It should be thick enough to keep a patty shape.
With hands, form patties.
Warm olive oil in a non-stick pan and cook patties a few minutes each sides.
Serve with a toasted hamburger bun and all your favorite trimmings.
