Cooking the chicken :

Season chicken breasts with salt and pepper.

Heat a frying pan with a little olive oil.

Cook chicken breasts over medium heat for approx. 5-7 minutes on each side, until golden brown and cooked through.

Allow chicken to cool, then cut into thin strips.

Prepare sauce:

In a bowl, combine mayonnaise, mustard and lemon juice. Add a pinch of salt and pepper to taste.

Assemble wraps:

Lightly heat tortillas in a skillet or microwave to soften.

Spread a spoonful of sauce over the center of each tortilla.

Arrange a few salad leaves, chicken pieces, diced tomatoes and julienned carrots.

Sprinkle with grated cheese.

Fold in the sides of the tortilla and roll up to form a wrap.
