Plant-based green bean & pesto pasta salad recipe

Pasta salads are generally very popular. However, it's easy to get tired of the creamy mayonnaise-based sauces that accompany them. With its bold flavors, pesto is an excellent alternative.

Ingredients for the green beans & pesto pasta salad
- 300 gr of pasta of your choice
- 3 cups green beans, cut in halves
- A chopped green onion
- 1/4 cup nutritional yeast (optional)
For the pesto
- 3 tbsp extra virgin olive oil
- 1/3 cup fresh basil
- 1/4 cup sundried tomatoes
- 2 tbsp hemp seeds, shelled
- 1 tbsp lemon juice
- A chopped garlic clove
Steps to prepare the green beans & pesto pasta salad
Cook pasta according to directions on the package. Rinse under cold water once cooked.
Preheat broil oven for 5 minutes. Bake the green beans in the oven for 10 minutes.
Using a blender or a small food processor, grind all the ingredients for the pesto.
In a bowl, combine the pasta, cooked green beans, pesto, chopped green onion and nutritional yeast (if used).
Serve!
