2 small zucchini

2 tablespoons of Galega organic extra virgin olive oil

150g frozen peas

75g of sheep's white cheese

1 whole lemon

Fresh mint, chopped

Preparation for the grilled zucchini summer salad recipe
Pour boiling water over frozen peas and store.
Cut thin strips of zucchini, either with a mandolin or with a vegetable peeler.
Meanwhile, cut the chili pepper in half, remove the seeds and finely chop the flesh.
Place on a stovetop grill, frying pan, or smooth skillet over medium-high heat. While hot, place the zucchini strips on the surface, making sure they do not overlap, and grill until brown.
Remove each one when it browns and place them in a bowl large enough to hold all the ingredients.
Drain the peas, add them to the bowl.
Drizzle olive oil and the juice of about half a lemon over the vegetables, sprinkle with salt and freshly ground black pepper.
Add the chili pepper, then the grated mint and basil. Break the cheese with your hands and sprinkle over the salad. Adjust seasoning and serve.
