Steps to prepare the keto creamy tomato soup recipe

Heat a large saucepan over medium-high heat and add the MCT oil, olive oil, onion and garlic. Cook for about 8 minutes or until the onions are translucent.

Add tomatoes and vegetable broth. Using the back of a wooden spoon, mash the tomatoes.

Add salt, pepper and dried herbs. Bring to a boil. Simmer for ten minutes, then remove from the heat.

Allow to cool. In a blender, pour the soup and add the coconut milk. Blend until smooth.

Return to saucepan to keep warm.

When ready to serve, garnish with fresh basil, nuts, pumpkin seeds or sour cream.
