Vegan Christmas meat pie recipe with homemade ketchup

Ingredients to prepare the vegan Christmas meat pie recipe
Meatless filling
- 2 puff pastries
- 400g Gusta Classico seitan roast
- 1 cup vegetable broth
- 1/4 cup olive oil
- 1 celery stick, chopped
- 1 yellow onion, chopped
- 1 medium size potato, diced
- 4 white mushrooms, chopped
Homemade ketchup
- 1 cup water
- 156 ml tomato paste
- ½ cup cider vinegar
- 1 tsp garlic powder
- 1 tbsp onion powder
- 2 tbsp cane sugar
- 2 tbsp molasses
- 1 tsp sea salt
- 1 tsp ground mustard
- 1/8 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/8 tsp "all spice"
Steps to prepare the vegan Christmas meat pie
Heat the oil in a skillet over medium heat. Add the vegetables and cook for about 7 minutes. Chop the seitan in a food processor. Place the vegetable broth and the chopped seitan in the skillet, then cook for about 3 minutes.
To assemble the meatless pie, place the first puff pastry in the bottom of the pie plate. Add the filling, then cover with the second pastry. Make a small opening in the center of the top dough, like a chimney. Bake for about 25 minutes or until the pie is golden brown.
Homemade ketchup
Combine all the ingredients in a saucepan over medium heat and simmer 5 to 10 minutes or until desired consistency.
Once the meatless pie is finished cooking, let it rest for about 10 minutes, then serve a portion topped with homemade ketchup.
