Edamame, avocado and pesto dip
Adding a little green to your diet is like child's play with this healthy, hearty, summer recipe!
Use it as a dipping sauce for delicious grilled wrap or panini. Add a generous portion for a colorful touch to your plate. But most importantly, try it with seasoned pita chips, the perfect paring of flavors and textures.
Did you know that edamame beans are very high in protein? It's rather rare for a vegetable to have this attribute, so let's take advantage of it and add it to our diet!
Edamame is actually a soybean that hasn't reached maturity. It is therefore more of a legume disguised as a vegetable. It has a light nutty taste and slips easily into your meals or in a dip recipe!

Ingredients
- 1 cup frozen shelled Edamame, thawed
- 1 medium avocado, cut up
- ¼ cup chopped green onion
- Juice of ½ a lime
- 1.5 tbsp basil pesto
- Salt and pepper
- Cedar Valley Selections Classic Spice pita chips (to serve)
Instruction
In a food processor, add edamame, avocado, green onion, lime juice, pesto, salt and pepper.
Blend until well combined and nearly smooth. Keep covered and chilled until ready to serve.
Garnish with more edamame, green onions, a few drops of lime juice and serve with Cedar Valley Selections Classic Spice pita chips.
