Herb and artichoke dip

With vegetables or crackers, this herb and artichoke dip is a perfect accompaniment for your midday lunch. It's creamy, nutritious and completely satisfying. Preparing in 10 minutes, it is also perfect for an impromptu visit. Plus, it’s vegan!

Ingredients

  • 120g Nuts for Cheese made from cashew nuts, herb and artichoke flavor
  • 1/4 cup plain yogurt
  • 1/2 tsp. tbsp olive oil
  • 1/4 red onion, chopped
  • 2 cloves of crushed garlic
  • 3 cups fresh spinach
  • 1 C. nutritional yeast (optional)

Preparation

Preheat the oven to 350°F

Sauté the garlic and onion until lightly browned. Add the spinach and cover for 1 minute. Remove the lid and stir until the spinach is completely wilted.

Mix Nuts for Cheese and yogurt. Add remaining ingredients and mix well.

Pour into an ovenproof mold and bake for 10 to 15 minutes.

Serve with bread, crackers and vegetables.
