Spirulina truffles

It's the start of the year. You may, like many people, intend to eat better. But how difficult it is! I have a great proposition for you! Why not combine green superfood and chocolate?! It interests you ?

Spirulina in brief

The truffles that I offer you contain spirulina. This algae has proven itself in health matters for a long time. It is rich in proteins and antioxidants. It also contains a large portion of iron and chlorophyll. Spirulina is so rich in nutrients that it is used to combat malnutrition in certain countries such as India, Peru and China.

On to the recipe!

Ingredients

  • 1 ripe avocado
  • ½ cup coconut flour
  • ¼ cup maple syrup
  • 2 tbsp. 1 tbsp melted coconut oil from Garden of Life
  • 1 C. spirulina powder
  • 1 C. teaspoon vanilla extract
  • Himalayan pink salt (available in bulk)

Chocolate coating

  • 340 g of 70% chocolate (available in bulk or in tablets )
  • 1 C. 1 tbsp melted coconut oil from Garden of Life

Preparation

  1. In the blender, place the avocado, coconut flour, maple syrup, coconut oil, spirulina and vanilla extract. Mix until you obtain a very smooth texture. Be careful not to overmix.
  2. From this mixture, shape small balls and spread them on a cookie sheet covered with parchment paper (or a reusable variant!). Place in the freezer for a minimum of 20 minutes.
  3. Meanwhile, melt the chocolate and coconut oil. Once the freezer step is finished, dip each ball into the chocolate and put them back on the baking sheet.
  4. Sprinkle the truffles with a pinch of salt and store them in the freezer in an airtight container. Stores for up to a month.
