Umeboshi means dried plum - "ume" meaning plum and "Boshi" dried. Yet the umeboshi is not a plum as we know it in the West. It is distinguished in particular by its wrinkled appearance and its acidic taste, more pronounced than that of the lemon once it is macerated. These plums marinated with salty and tangy taste are delicious to accompany the sushi. In Japan, the umeboshi will gladly accompany a dish of rice. It is also integrated into makis, sushi and nigiris to give them an acidulous taste. At breakfast, it is tasted with tea to get energy throughout the day.

Japanese plums (ume), red shiso (Perilla), sea salt.
