Piedmontese sauce

This comforting sauce based on crushed tomatoes, has a pronounced taste of red wine, a beautiful acidity and a peppery finish.

Uses

It is usually served with fettucins, tagliatelle, gnocchius or stuffed pasta, such as agnolottis. You can add sausage flesh or minced meat to get an excellent ragù sauce. The average proportions of tomato sauce and dough are 375 ml (1 ½ cup) for 500 g (1 pound). Do not throw all the water cooking pasta. It's a good idea to add it to the sauce. Incorporate from ¼ to ½ cup or a ladle of cooking water to your sauce before adding the pasta. This salt and starchy water gives not only flavor, but also helps the sauce to adhere to pasta, in addition to thicken it.

Ingredients

Tomato pulp and tomato coulis Datterino 88% (Italy). Extra virgin olive oil, Barbera red wine, onions, carrots, celery, sea salt, spices, citric acid. Does not contain alcohol. May contain traces of milk and gears.

They are cooked on the flame, as it does the Italian mammas, which allows to evaporate the water gradually.
