Oat, apple and cinnamon cookie recipe

Makes about 15 cookies
Dry ingredients
- 1 pack of Yumi apple-cinnamon overnight oats
- 1 cup whole wheat flour or gluten-free flour of your choice
- 1/2 cup oatmeal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 cup diced dates
- 1 pinch of salt
Wet ingredients
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 cup unsweetened applesauce
- 1 cup vegetable drink
- 2 tbsp melted coconut oil
Preparation for the oatmeal, apple and cinnamon cookie recipe
Preheat oven to 375°F and cover baking sheet with parchment paper.
Combine dry ingredients in one large bowl and wet ingredients in another.
Add the wet mixture to the dry mixture and mix until well incorporated.
Using a spoon, form small balls and place them on the baking sheet about an inch apart.
Cook for 12 (tender) to 15 (crispy) minutes and let stand for about 5 minutes on a cooling rack before serving.
