Plant-based Christmas turkey recipe
Traditional Christmas food is often far from vegan friendly. But it doesn't have to be that way! Cooking up a delicious plant-based holiday feast is totally possible and we're going to help you make it happen! To start, here's our plant-based Christmas turkey recipe, made with jackfruit, with potato puree and cranberry sauce side dishes.

Ingredients to prepare the plant-based turkey recipe and its trimmings
Plant-based turkey
- 2 cans young jack fruit, rincer and drained
- 2 tbsp deodorized coconut oil
- 1 medium size onion, chopped
- 3 garlic cloves, chopped
- 2 cups mushrooms, chopped
- 2 cups water
- 1 vegetable broth cube
- 2 tbsp tamari sauce
- 2 tsp fine herbs, fresh or dehydrated (preferably thym, sage or rosemary)
- 1/2 tsp fresh ground pepper
- ¼ tsp nutmeg
Potato puree
- 2 large white potatoes
- 3 tbsp plant-based cooking cream
- 2 tbsp plant-based butter
- 1/4 tsp fresh ground pepper
- Salt, to taste
Cranberry sauce
- 1, 12 oz package of fresh cranberries
- ½ cup orange juice
- ½ cup water
- ¾ cup coconut sugar
- 2 cinnamon sticks
- 4 tsp ground ginger
- 1/8 tsp ground nutmeg
- Zest from 2 oranges
Steps to prepare the plant-based turkey recipe and its trimmings
Plant-based turkey
Cut the jackfruit pieces lengthwise, then crush them with a wooden spoon to shred them. Reserve.
Heat the oil in a deep skillet over medium heat. Saute onion and garlic 4 to 5 minutes. Add mushrooms, water, crushed broth cube and seasonings. Let simmer for ten minutes.
Pour the contents of the pan into a blender and blend. Then return to the pan. Add shredded jackfruit. Simmer covered over medium-low heat for about 45 minutes. Stir occasionally.
Potato puree
Peel and cut the potatoes into small cubes.
Place the potato cubes in a pot of salted water. Bring to a boil and cook until tender.
Drain, then mash the potatoes and add the remaining ingredients. Mash until desired texture is obtained.
Cranberry sauce
Rinse the cranberries and set aside.
In a medium saucepan, heat the orange juice, water and coconut sugar. Mix until the sugar dissolves. Add cranberries, spices and orange zest. Bring to a boil.
Reduce the heat and simmer for 10 minutes, making sure to stir often. Let cool to allow the sauce to thicken.
Serve the plant-based turkey with potato puree and cranberry sauce. Garnish with black pepper and sprigs of fresh rosemary.
