Banana and chia muffins recipe
This banana and chia muffins recipe makes a perfect snack at any time of the day. Thanks to ground chia seeds, they will not crumble. Thanks to Medjool dates and bananas, they are fluffy and delicious to perfection.
Chia seeds are an excellent plant source of omega 3 and fiber. These two nutrients are essential for a balanced diet and good natural health.
Ingredients for the banana and chia muffins recipe
- 1 tbsp Prana organic ground black chia seeds
- 6 tbsp water
- 2 1/4 tsp baking powder, divided
- 3 very ripe bananas
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 cup organic raw coconut oil
- 2 cups spelt flour or gluten-free all-purpose flour
- 1/2 tsp ground nutmeg
- 1/2 tsp sea salt
- 8 Prana organic Medjool dates, pitted and chopped
Topping
- 1 tbsp Prana organic whole black chia seeds, optional
- Banana slices, optional
Instructions for the banana and chia muffins recipe
Preheat oven to 350°F and grease or line a muffin tin with paper cups.
In a small bowl, combine the ground chia, water and 1/4 tsp baking powder. Let stand for 15 minutes until a sticky liquid forms.
Melt the coconut oil in a water bath.
In a large bowl, mash the bananas with a fork. Add the chia blend, maple syrup, vanilla, coconut oil and dates.
In another bowl, combine the flour, salt, remaining baking powder and nutmeg.
Add the dry ingredients to the wet ingredients and mix well until a homogeneous paste is obtained.
Divide the batter into muffin tins, garnish with a slice of banana and sprinkle with chia seeds if desired.
Cook for 15 to 20 minutes.
Remove from the oven and let cool for a few minutes before unmolding.
