4 Beyond Burger patties (2 packages)
½ lettuce iceberg lettuce, torn
1 ½ cups fresh Pico de Gallo or salsa
3 cups tortilla chips
2 1/2 cups vegan nacho cheese (recipe below)
6 slices vegan bacon
Sliced dill pickles
3 cups fresh guacamole
For the vegan nacho cheese
3/4 cup canned coconut milk (can be replaced with a plant-based drink of your choice, but pay attention to the texture. Adjust the quantity as needed)
3 tbsp. nutritional yeast flakes
2 tbsp. tbsp tapioca flour
½ tsp. tsp sea salt
½ tsp. tsp onion powder
¼ tsp. garlic powder
1 pinch of paprika
Preparation for the nacho burger
For the vegan nacho cheese
Place all the ingredients for the vegan macho cheese in a saucepan over medium heat. Stirring continuously, bring to a boil.
Simmer over medium-low heat for about a minute or until the cheese is thicker and stretches easily.
If the cheese is too thick, add a little vegetable drink.
For the Nacho burger
Cook Beyond Burger patties according to package directions.
Top with the burger ingredients and add a generous portion of vegan nacho cheese.
