Minestrone soup recipe
The arrival of cold weather is particularly pleasant because it brings back soups! Let's not limit ourselves to eating them as starters, let's go for a good hearty soup as a meal. Warm and comforting!
This Minestrone soup recipe is packed with minerals, fiber and a full serving of vegetable protein.
Ingredients for Minestrone soup recipe
- 6 cups vegetable broth
- 3 tbsp. olive oil
- 1 fennel bulb, chopped
- 1 leek (white and pale green portion only)
- 1 cup onion, chopped
- 3 stalks celery, chopped
- 2 cloves garlic, finely chopped
- 1 cup green beans, chopped
- 1 cup peas
- 1 cup spinach
- 1 cup small noodles
- 2 carrots, cut into small cubes
- 1 tsp. sea salt
- ½ tsp. pepper
- 1 portion Garden of Life All in One Flavorless
- A little parsley for garnish
This list of ingredients is of course not exclusive. Let yourself go and add your favorite vegetables or those that don't look so good in your fridge!
Preparation for Minestrone soup recipe
Heat the olive oil in a large saucepan over medium heat. Add the onion, leek, fennel, celery and garlic. Cook for approx. 7 minutes.
Add remaining ingredients and simmer over low heat for at least 30 minutes before serving.
Garnish with parsley just before serving.
