Gluten-free, plant-based bread stuffing recipe

Ingredients to prepare the gluten-free, vegan bread stuffing recipe
- 1 gluten-free multigrain bread, cut in 1 inch cubes
- 1 gluten free white bread loaf, cut in 1 inch cubes
- 1/4 cup flat fresh parsley
- 3 tbsp fresh sage, chopped
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 cup unsalted plant-based butter tasse de beurre non salé
- 1 large onion, chopped
- 1 cup celery, chopped
- 2 flax eggs
- 1 cup vegetable broth
- 1/2 cup cooking cream
Steps to prepare the gluten-free, vegan bread stuffing recipe
Preheat the oven to 375°F. Line an ovenproof casserole with parchment paper or coat with nonstick spray.
Spread the bread cubes on a cookie sheet. Bake for 15 minutes or until golden and crispy. Stir halfway through cooking. Leave to cool when finished cooking. Reduce oven temperature to 325°F.
Melt butter in a pan. Add onion and celery. Cook until they are tender.
Beat the flax eggs, broth and cream in a large bowl. Add bread, parsley, sage, salt, pepper and onion and celery mixture. Pour into the lined pan and cover with aluminum foil. Bake 30 minutes.
Remove foil and bake for an additional 20-25 minutes. This second cooking will allow to obtain a golden color.
